… weird names for those who haven’t yet discovered the history of the Mediterranean’s counties: the Languedoc-Roussillon was stamped by the Crusades, the commercial activity and the pilgrimages of years gone by. A real melting pot of recipes shared between the areas of the South of France, but also Italy, Spain and the Maghreb. From the same basic recipes, regional specialities were born, different shapes, textures and names.
